Loksha / Lokša



Loksha used to be one of the most common side dishes. It wasn't as ordinary as bread and it wasn't as fancy as cake. It would be eaten as it is, perhaps with some sour milk or kefir and as a companion to many other main dishes .... There is another recipe for loksha, made with potatoes. Something like this.

Lokša v minulosti bola jedeným z najčastejších jedál. Ale nebola tak obyčajná ako chlieb a nebola tak nóbl ako koláč. Jedla sa tak ako je, snáď s kyslým mliekom, alebo kefírom a spolu s mnohými inými jedlami ... Iný recept na lokšu je so zemiakmi. Asi takto.




Loksha

400 g all purpose flour
210 ml kefir or sour milk or buttermilk
1 teaspoon sodium bicarbonate
1 teaspoon salt
100 g farmer cheese (optional)
oil for frying

Knead together all the ingredients until smooth. Add more liquid, or flour if needed.
Divide dough into 7 pieces, roll into bolls, roll balls of dough out into a thin circle, 3-4mm thin.

Heat the pan on high heat with a small amount of frying oil and when oil starts to smoke, toss loksha in. Stir-fry for 1 minute or until brown. Turn over and fry the other side.

Loksha should be eaten fresh.

Lokša

400 g polohrubej múky
210 ml kefíru, alebo kyslého mlieka, alebo cmaru
1 lyžička sódy bikarbóny
1 lyžička soli
100 g tvarohu, môžete vynechať
olej na vyprážanie

Na pracovnej doske vymieste všetky ingrediencie do vláčneho cesta. 
Rozdeľte cesto na 7 kusov, vytvarujte guličku, ktorú valčekom vyvaľkájte do tvaru kruhu na hrúbku približne 3-4 mm. 


Na panvici rozohrejte malé množstvo oleja na vyprážanie a keď olej začína dymiť, vhoďte lokšu, opečte cca 1 minútu, alebo kým nezhedne. Obráťte a opečte druhú stranu. 


Lokšu jedzte čerstvú.

The Next Day Loksha 

One loksha from the previous day
3 tablespoons ground poppy seeds
1 1/2 tablespoons granulated sugar
0.5 ml boiling water

Cut the one-day-old loksha into about 2x2 cm wide squares. Put into a bowl, sprinkle with poppy seeds and sugar and pour over the boiling water. Stir.

Lokša na Druhý Deň

1 lokša z predchádzajúceho dňa
3 lyžice mletého maku
1 1/2 lyžice kryštálového cukru
0,5 ml vriacej vody

Starú lokšu pokrájajte na cca 2x2 cm. Dajte ju do misky, posypte makom a cukrom a prelejte vriacou vodou. Zamiešajte.
