Christmas Gingerbread Cookies / Vianočné Perníky
After decorating, when icing is still wet, sprinkle gingerbread cookies with large sugar crystals.
If you also cut out a small hole (using a straw, or so) gingerbread cookies could be hanged (using a ribbon) on the tree or on the twig in a vase. Store gingerbread cookies in a cookie jar or tin for several months. If too dry, include an apples quarter.

Po ozdobení, ak je poleva ešte mokrá, posypte perníky veľkými kryštálikmi cukru.
Počas vykrojovania foriem vykrojte malý otvor (napríklad slamkou) a po upečení a ozdobení môžete perníky zavesiť stužkou na stromček, alebo na vetvičku vo váze. Perníky skladujte aj niekoľko mesiacov v uzavretej plechovke. Ak príliš vyschnú, priložte štvrť jablka.
Christmas Gingerbread Cookies
For dough:
400 g all-purpose flour
75 g butter, room temperature
2 eggs
140 g powdered sugar
2 tablespoons honey
1 teaspoon baking soda
20 g store bought gingerbread spices (or 7 cloves, 1 teaspoon of anise, 1/2 teaspoon cinnamon, pinch of star anise)
For icing:
1 egg white
150 g powdered sugar
1/2 tablespoon lemon juice
neutral oil to grease baking tray
1 egg for eggwash
Preheat oven to 190˚C.
Grease two baking trays.
Put all the dry ingredients for the gingerbread cookies into larger bowl and mix them together. Add butter, eggs and honey and knead until a smooth dough forms.
Sprinkle lightly your working desktop with some flour and roll out the dough to a thickness of about 5 mm. Cut out the cookies using cookie cutters of various shapes. Place them directly on the pre-greased baking trays. Bake for about 10 - 12 minutes or until the cookies begin to brown slightly.
Immediately after removing cookies out from the oven, brush them with some egg-wash. Allow to cool.
Meanwhile, prepare the icing. Mix together egg white, lemon juice and sugar to a slightly denser paste consistency. For icing use piping bag, plastic bag or plastic bottle. Draw the outlines first and let it dry (at least 1 hour). Dilute the icing with a little bit of a lemon juice and flood in the contours to form an even layer. Let dry completely. Once again, add some powdered sugar and decorate the white areas. You'll create a fine relief.
Makes about 70 gingerbread cookies (depends on your cookie cutters).

Vianočné Perníky
Na cesto:
400 g hladkej múky
75 g masla, izbovej teploty
2 vajcia
140 g práškového cukru
2 lyžice medu
1 lyžička sódy bikarbóny
20 g pernikového korenia (alebo 7 klinčekov, 1 lyžička anízu, 1/2 kávovej lyžičky škorice, štípka badyánu)
Na polevu:
1 bielko
150 g práškového cukru
1/2 lyžice citrónovej šťavy
neutrálny olej na vymastenie plechov na pečenie
vajce na potretie
Predhrejte rúru na 190˚C.
Vymastite dva plechy na pečenie.
Vložte všetky suché prísady na perník do väčšej misy a zamiešajte ich. Pridajte maslo, vajcia a med a vypracujte hladké cesto.
Pracovnú dosku jemne posypte múkou, cesto vyvaľkajte vlačekom na hrúbku cca 5 mm a vykrojujte tvary použijúc formičky rôznych veľkostí. Ukladajte ich na pripravené plechy. Pečte 10 - 12 minút, alebo kým perníky nezačnú mierne hnednúť.
Hneď po vybratí potrite rozšľahaným vajcom. Nechajte vychladnúť.
Medzitým si pripravte polevu. Zmiešajte spolu bielko, citrónovu šťavu a cukor na pastu tuhšej konzistencie. Použijte cukrárenske vrecko, igelitový sáčok alebo plastikovú fľašu na náplne. Hustejšou polevou "nakreslite" obrysy, nechajte uschnúť (minimálne 1 hodinu). Potom náplň zrieďte troškou citrónovej šťavy a zalievajte obrysy tak, aby vznikla súvislá vrstva. Nechajte úplne zaschnúť. Polevu ešte raz zahustite cukrom a dekórujte biele plochy. Vznike tak jemný reliéf.
Cca 70 perníkov (podľa formičiek)

Just to let you know, it says one egg yolk in the ingredient list for the icing, but in the directions it says egg white! Obviously it's supposed to be egg white but I definitely made the mistake the first time around!
